Yacon is a domesticated plant in the Andes of Peru. This plant has two edible parts which have many health benefits

The first one is the root that has the appearance of a yuca which we can be prepared as a juice or directly as a fruit, and the second part are the leaves, that can be consumed as hot beverages, usually called “mates”.

Benefits.

Besides being a food used for diets in order to lose weight, the yacon has also properties to lower cholesterol and to control blood glucose levels.

Use

The yacon can be consumed in salads, smoothies or as a fruit. But in case of diabetic patients, the best option is to make hot beverages from yacon leaves, additionally to that they should keep healthy habits (healthy food and physical activity). In this way, they can maintain glucose levels within normal parameters and improving their quality of life.
